Having good brakes is the most important safety item that should not be overlooked. 180mm or more hydraulic brakes usually perform the best.

Hub Motor over 1000W peak watts with at least 75Nm of torque

More weight need more power to get up the hills. Torque is the most important thing to look for, but the controller needs to put out the watts to make it all work.

Battery with 700Wh or more

More weight will eat up more juice. It'll take a heavy rider more watts hours to go a mile, so the overall range will suffer. A bigger or multiple batteries can make up for it.

Gears

Some eBikes come with a single gear, that's probably not a good idea for heavy riders. 7 speed rear cogs are common and can come in handy when the motor needs some help getting up a hill or keeping up with traffic.
